Pan Roasted Filet Mignon with Apple Red Wine Sauce

Serves 4

Celebrate apple season with this easy Pan Roasted Filet Mignon with Apple Red Wine Sauce. A special meal to delight your guests with seasonal flavor.

Ingredients:

  • 4 (8-ounce) Certified Angus Beef ® filet mignon steaks
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 apples, peeled, cored and thinly sliced
  • 1 shallot, peeled and thinly sliced
  • 2 cups red wine
  • 2 tablespoons butter

Instructions:

  1. Preheat oven to 350ºF.
  2. Heat oil in heavy oven-proof skillet (not nonstick) over medium-high heat.
  3. Season filet mignon steaks with salt and pepper; sear in skillet for 2 minutes on each side.
  4. Place pan with steaks in oven for 5 to 10 minutes for medium-rare or until steaks reach desired doneness.
  5. Put pan on stovetop and remove steaks from pan; add apples, shallots and red wine. Continue cooking over medium heat until it reaches a sauce consistency. Stir in butter and remove from heat.
  6. Serve sauce over the filet.
