Our “Meat Lab,” complete with an overhead rail for full-side butchery, is designed for discovery. Guests don coats and gloves to get hands-on exposure to sides, primals, subprimals and grinds. From the popular menu and meat case mainstays to lesser-known treasures, you’ll learn how the pieces come together in our fully functional chop shop. It’s no ordinary training center!
