Hearty Beef Minestrone

Serves 6-8

A classic soup loaded with ground beef, pasta, beans, and Italian seasonings. Make this easy Hearty Beef Minestrone recipe for a comforting meal on a cold day.

Ingredients:

  • 1 pound Certified Angus Beef ® ground beef, 80% lean
  • 1 teaspoon canola oil
  • 2 teaspoons kosher salt, divided
  • 1/2 teaspoon black pepper
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 2 teaspoons dried Italian herb blend
  • 1 quart (32-ounces) low-sodium beef broth
  • 2 (14.5-ounce) cans Italian-style diced tomatoes
  • 1 cup ditalini pasta
  • 1 (15-16 ounce) can kidney beans, drained
  • 1 cup frozen cut green beans

Instructions:

  1. Heat oil in a large Dutch oven or heavy-bottom pot over medium-high heat. Add ground beef, 1-teaspoon salt and 1/2-teaspoon pepper. Frequently chop/stir beef while browning, about 5 minutes. Add onion, garlic, carrot and Italian herb blend; sauté for another 5-8 minutes.
  2. Add beef broth, diced tomatoes and remaining 1-teaspoon salt; bring to a low boil. Reduce heat to low and simmer 15 minutes. Add pasta and gently simmer for an additional 10 minutes. Add kidney beans and green beans and simmer for an additional 5 minutes.
