Instant Pot Beef Pot Pies

Serves 6

Ingredients:

  • 1 1/2 pounds Certified Angus Beef ® bottom round steaks, cut into 1/2-inch cubes
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon black pepper
  • 2 teaspoons canola oil
  • 1 small onion, diced (about 1/2-cup)
  • 2 cloves garlic, minced
  • 1 cup whole milk
  • 2 tablespoons flour
  • 1 cup frozen pea and carrot blend
  • 1 tube (8-ounces) crescent roll dough sheets
  • 6 oven-safe 7-8 ounce ramekins

Instructions:

  1. Preheat oven to 375°F.
  2. Season beef with 1-teaspoon salt and pepper. Set Instant Pot to “sauté” and sear beef with canola oil on two sides working in batches; set beef aside. Add onion and garlic to the pot and sauté 3 minutes. Add reserved beef cubes and beef broth.
  3. Set Instant Pot to “pressure cook” and cook for 15 minutes on high pressure. While beef is cooking combine milk, flour and remaining 1/2-teaspoon salt; set aside.
  4. Vent steam and remove lid from Instant Pot. Set to sauté, stir in flour and milk mixture, simmer 2 minutes and turn off heat. Stir in frozen peas and carrots.
  5. Fill six ramekins with about 2/3-cup of beef filling; set on a sheet tray.
  6. Roll out crescent dough sheet to an 8 x 12 inch rectangle and cut into six 4 x 4 inch squares. Drape a square over each ramekin. Bake for 12-15 minutes or until crust is golden brown, rotating pan half way through baking.
