Grilled Flank Steak with Warm Bean and Orzo Salad

Serves 6


  • 2 pounds Certified Angus Beef ® flank steak
  • 1 pound sliced bacon, cut in 1/4-inch strips
  • 1/2 cup thinly sliced onion
  • 1/2 cup sliced kalamata olives
  • 2 cups cannellini beans, drained and rinsed
  • 4 cups cooked orzo pasta
  • Kosher salt and fresh ground pepper to taste
  • 2 tomatoes, deseeded and finely diced
  • 2 tablespoons finely chopped fresh oregano
  • 3 scallions, rinsed and chopped


  1. In a large saucepan or Dutch oven, saute bacon and onion until bacon is browned. Add olives, beans and orzo; cook over medium heat until mixture is hot.
  2. Season flank steak with salt and pepper and grill to desired doneness. Allow steak to rest 5 minutes on cutting board.
  3. Stir tomatoes, oregano and scallions into bean/orzo mixture. Season with salt and pepper.
  4. Slice steak thinly across the grain. Serve over Bean and Orzo Salad.
