  • 4 pounds Certified Angus Beef ® eye of round roast
  • 1/2 cup apple cider vinegar
  • 1/2 cup soy sauce
  • 1 tablespoon brown sugar
  • 3 teaspoons kosher salt, divided
  • 2 teaspoons ancho chili powder
  • 2 teaspoons granulated garlic
  • 2 teaspoons granulated onion
  • 1 teaspoon ground mustard
  1. Combine vinegar, soy sauce, brown sugar, 1 teaspoon salt and remaining spices in a mixing bowl. Whisk until sugar and salt dissolve.
  2. Place eye of round roast in a heavy-duty zipper-locking bag and pour marinade over roast. Marinate for 24 hours, rotating roast in marinade at least once.
  3. Preheat oven to 450°F232°C. Remove roast from marinade, discard remaining marinade and pat dry. Season evenly with 2 teaspoons salt10 g salt. Place in a roasting pan or on a wire rack in a sheet pan. Roast for 15 minutes; reduce heat to 350°F177°C and roast for about 1 hour and 15 minutes or until the roast reaches an internal temperature of 125°F52°C for a deep pink interior.
  4. Allow roast to rest for at least 15 minutes before slicing very thin.
