Grilled Ribeye with Charred Scallion Sauce

Treat your family and friends to sublime charred scallion sauce made with grilled jalapeño and garlic, tart lime, and fresh cilantro. A perfect complement to tender, juicy ribeye steak.

Ingredients:
  • 4 Certified Angus Beef ® ribeye steaks, about 1-inch thick
  • 1 bunch green onions
  • 1 jalapeño, split in half lengthwise and seeded
  • 2 large cloves garlic, still in skin
  • 2 limes, juiced
  • 1 cup cilantro, roughly chopped
  • 1/2 cup canola oil
  • 1 teaspoon chipotle powder
  • 4 1/2 teaspoons kosher salt, divided
  • 2 teaspoons fresh cracked black pepper
Instructions:
  1. Preheat grill to high.
  2. Grill green onions until lightly charred, about 30-60 seconds; set aside. Grill jalapeño and garlic to char and soften, about 2-3 minutes.
  3. Peel skin from garlic and combine with green onions and jalapeno in a blender. Add lime juice, cilantro, oil, chipotle powder and 1/2-teaspoon salt. Remove center plug from blender lid and blend by pulsing on high just until large chunks are gone and oil is emulsified.
  4. Season ribeye steaks with remaining salt and pepper. Grill 4-5 minutes on each side or until they reach an internal temperature of 125°F for medium rare. Serve with warm sauce.
