Instant Pot Corned Beef Hash

Serves 6

Tender sliced corned beef cooked with potatoes and onions and served with a fried egg on top. Make the best Instant Pot Corned Beef Hash with this easy, step-by-step recipe.

Ingredients:

  • 1 pound Certified Angus Beef ® corned beef
  • 6 small red potatoes, sliced
  • 2 tablespoons butter
  • 1 tablespoon canola or vegetable oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked black pepper
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 6 fresh eggs, pan fried

Instructions:

  1. Rinse corned beef and place in instant pot. Add 2 cups water and seasoning packet from package.
  2. Pressure cook on high for 90 minutes and allow to naturally release (about 20 minutes).
  3. Once corned beef has cooled enough to handle, slice across the grain into 1/4-inch thick slices.
  4. Heat butter and oil over medium-high heat in a cast iron skillet. With pan hot and butter and oil just beginning to smoke, add potatoes and sear for 8-10 minutes or until potatoes begin to crisp and become golden brown; season with salt and pepper.
  5. Add sliced corned beef, onion, garlic and chili powder to the skillet and continue to cook another 3-5 minutes or until onions and corned beef have taken on color. Keep warm.
  6. In a non-stick skillet or separate cast iron pan, fry eggs to desired doneness.
  7. Top hash with fried eggs and serve.
