Dry Rub Chimichurri Sirloin Skewers

Yields 4 servings

Ingredients:

  • 1 pound Certified Angus Beef ® top sirloin steak, cut into 1 1/2-inch cubes
  • 1 tablespoon dried cilantro
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • 2 teaspoons kosher salt
  • 2 teaspoons coarse black pepper
  • 2 teaspoons granulated garlic
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 8 (4-6) metal skewers (or bamboo skewers, soaked in water)

Instructions:

  1. In a mixing bowl, combine cilantro, oregano, parsley, salt, pepper, garlic, paprika and thyme.
  2. Skewer 2-3 beef cubes on each skewer and season with 2-tablespoons dry rub, reserving excess for future use.
  3. Grill skewers 1- 2 minutes per side over medium-high heat, grilling all four sides.
