Instant Pot French Dip Pull-Apart Sliders

Serves 12


  • 2 pounds Certified Angus Beef ® shoulder roast, cut into 2-inch cubes
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons canola oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 4 sprigs fresh thyme
  • 2 packages pull apart rolls (look for Hawaiian rolls, 12 per pack)
  • 12 slices provolone cheese
  • 2 tablespoons butter, melted
  • Coarse salt for topping


  1. Season beef with salt and pepper while heating oil in Instant Pot set to Sauté.
  2. Brown beef on two sides (about 4-5 minutes). Add onion and garlic and sear, stirring occasionally another 2-3 minutes. Add beef broth, secure lid and set to Meat/Stew setting (will take about 35 minutes to cook).
  3. Prepare rolls by cutting each group of 12 horizontally to create one top layer and one bottom layer. Shingle six slices of cheese on the bottom layer of each group of 12 rolls.
  4. Release steam from Instant pot, remove lid and pull beef chunks, setting in a bowl to cool for 10 minutes. Set Instant pot to Sauté for 10 minutes to reduce cooking liquid.
  5. Preheat oven to 300°F. Strain cooking liquid, reserving for au jus. Skim fat from top and keep warm.
  6. With two forks or by hand shred beef and spread evenly over the provolone on each group of rolls. Place the top layer of the rolls atop the beef. Brush this layer with melted butter and sprinkle the center of each bun with a pinch of coarse salt.
  7. Bake15 minutes and serve with jus. Guests are welcome to pull apart sliders on their own or they can be cut and served separately.
