Chili Mocha Flat Iron Steaks

Serves 4

Ingredients:

  • 2 (1 1/2 pound) Certified Angus Beef ® flat iron steaks
  • 2 1/2 teaspoons kosher salt
  • 2 teaspoons ancho chili powder
  • 2 teaspoons finely ground espresso
  • 2 teaspoons brown sugar
  • 1 teaspoon cocoa powder
  • 1/2 teaspoon black pepper

Instructions:

  1. In a small mixing bowl whisk together salt, chili powder, espresso, brown sugar, cocoa powder and pepper.
  2. Generously coat steaks with the spice rub, cover with plastic wrap and refrigerate at least one hour.
  3. Grill steaks on medium high heat for 3-4 minutes per side (125-130°F internal temperature for medium rare). Rest 5 minutes, slice against the grain.
