Classic Patty Melt

Serves 4

Ingredients:

  • 1 1/2 pounds Certified Angus Beef ® ground beef, 80% lean
  • 3 tablespoons unsalted butter, divided
  • 2 yellow onions, thinly sliced
  • 1/4 cup white wine (optional)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 slices marble rye bread
  • 7-8 ounces Gouda cheese, thinly sliced
  • 8 slices Swiss cheese, approximately 1/2-ounce each

Instructions:

  1. Melt 1-tablespoon butter in a skillet over medium low heat; add sliced onion. Stirring occasionally, slowly cook until onions have caramelized and reached a dark golden brown, about 30 minutes. Increase heat, add white wine and reduce until wine is absorbed, 3 minutes; remove pan from heat.
  2. Mix Worcestershire into ground beef and divide mixture into four 6-ounce portions, pressing into 1/2-inch thin patties shaped like the bread slices; season with salt and pepper.
  3. Evenly spread remaining butter on one side of each slice of bread. Lay butter-side down on large cutting board and top half of the slices with Swiss cheese and their mates with Gouda.
  4. In a large cast iron skillet, cook patties over medium-high heat for about 3-4 minutes per side, remove from pan and top patties with caramelized onions. Wipe skillet clean with paper towels.
  5. Place bread slices buttered side down in skillet over medium heat. Working in batches of four slices (2 of each cheese), toast over medium heat to begin to melt cheese. Top two slices with 2 patties, cover with mates and transfer to cutting board. Repeat with second batch; slice in half to serve.
