Ingredients:
  • 6 pounds Certified Angus Beef ® New York strip roast
  • 1 nori seaweed sheet
  • 4 teaspoons dried orange peel
  • 2 teaspoons red pepper flakes
  • 1 teaspoon pink peppercorns
  • 4 teaspoons kosher salt
  • 4 teaspoons sesame seeds
  • 1 teaspoon ancho chili powder
  • 1 teaspoon paprika
Instructions:
  1. Rip nori into a few strips and pulse in a food processor or spice grinder to begin to shred. When nori is broken apart, add orange peel, red pepper flakes and pink pepper. Blend until a coarse-grained spice mixture is obtained.
  2. In a mixing bowl combine spice mix from food processor with salt, sesame seeds, ancho and paprika. Evenly coat New York strip roast with togarashi seasoning. Cover and refrigerate for at least one hour before roasting, overnight preferred.
  3. Preheat oven to 450°F232°C and place strip roast in a roasting pan or on a wire rack in a sheet pan. Roast for 15 minutes, reduce heat to 350°F177°C and continue to roast for about 1 hour and 15 minutes or until the internal temperature is 125°F52°C for a deep pink interior.
  4. Allow to rest for at least 15 minutes before slicing.
