    Mix together mayonnaise, pickle juice, 1/4 teaspoon salt and 1/2 teaspoon pepper. Mix in red cabbage, carrot and parsley; set slaw aside.

    Preheat grill. Portion ground chuck into 6 patties and season with salt and pepper to taste. Grill to desired doneness (USDA recommends internal temperature of 160° F.) Top each with Swiss cheese, move to cooler side of grill and close lid to melt cheese.

    To assemble, spread mustard on each bun bottom, top with slaw, cheeseburger and bun lid. Stab with a skewered cornichon and serve.
