Ingredients:
  • 4 ounces Certified Angus Beef ® Steak Strips by Gary West Smoked Meats, traditional flavor
  • 4 large corn tortillas
  • 2 tablespoons butter
  • 1/2 cup diced red pepper
  • 1/2 cup diced green chilies
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 eggs, beaten
  • 1/4 cup canned black beans, drained
  • 1/2 cup grated Monterey Jack cheese
Instructions:
  1. Wrap tortillas in heavy-duty foil and heat.
  2. In a large fry pan, melt butter. Add steak strips, red pepper, chilies eggs, salt and pepper. Cook over low heat, stirring constantly. Just before eggs finish cooking, add drained black beans and continue cooking until eggs are firm.
  3. To assemble, divide egg mixture equally between warmed tortillas. Top each with cheese; wrap and serve.
