Cheese Ravioli with Beef and Mushroom Alfredo Sauce

Serves 4

The best leftover pot roast recipe for a quick and easy skillet pasta dinner. Make a hearty family meal with this Cheese Ravioli with Beef and Mushroom Alfredo Sauce recipe.

Ingredients:

  • 2 cups leftover Certified Angus Beef ® pot roast, shredded in small chunks
  • 2 tablespoons butter
  • 2 shallots, chopped
  • 2 cloves garlic, chopped
  • 8 ounces baby portabella mushrooms, diced
  • 1 (9-ounce) package refrigerated cheese filled ravioli, cooked according to package instructions
  • 1 (15-ounce) jar Alfredo sauce
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon chopped fresh sage
  • Fresh ground pepper to taste
  • Parmesan cheese

Instructions:

  1. In medium skillet, melt butter. Add shallots and garlic, sauté over medium heat 1-2 minutes. Add mushrooms and sauté 3-4 minutes.
  2. Add beef and cook for 4-5 minutes.
  3. Stir in Alfredo sauce and prepared ravioli; heat through. Add herbs and season with pepper. Garnish with Parmesan cheese before serving.
