Sweet Cherry and Chipotle Strip Roast

Serves 8-12

Ingredients:

  • 1 (5-pound) Certified Angus Beef ® strip roast
  • 1 cup canned sweet dark cherries, drained
  • 1 cup frozen red sweet cherries
  • 2 tablespoons chipotle peppers in adobo
  • 2 tablespoons molasses
  • 2 tablespoons coarse kosher salt
  • 1 tablespoon fresh cracked pepper

Instructions:

  1. Preheat oven to 450°F.
  2. Combine cherries, chipotle peppers and molasses in a blender. Divide sauce; reserving half for glaze and half for a serving sauce.
  3. Place roast, fat side up, in roasting pan with rack and season with salt and pepper. Place in preheated oven for 15 minutes.
  4. Reduce heat to 325°F and brush roast with a thin glaze of cherry sauce. Repeat every 15 minutes until roast reaches desired doneness, approximately 1 1/2 hours for medium doneness (135-140°F).
  5. Remove roast from oven and let rest for 15 minutes. Heat remaining sauce in small saucepan. Slice roast across the grain and serve with warmed sauce.
