Meatloaf with Leftovers

Serves 4-6, plus 2 additional meals for 4 (salad and sandwich)

Make this easy recipe for meatloaf on the weekend and have leftovers for two additional meals during the week. A fantastic time-saving dinner plan your family will love.

Ingredients:

  • 3 pounds Certified Angus Beef ® ground chuck
  • 4 medium Portobello mushrooms, diced
  • 1 bunch scallions, sliced
  • 1 tablespoon chopped sage
  • 1 tablespoon chopped basil
  • 1 tablespoon chopped oregano
  • 1 tablespoon chopped Italian parsley
  • 1 medium Spanish onion, diced
  • 1/2 red bell pepper, diced
  • 3 eggs
  • 3 cloves garlic, minced
  • 2 1/4 cups bread crumbs
  • 2 teaspoons kosher salt
  • 2 teaspoons ground black pepper
  • 3/4 cup barbecue sauce

Instructions:

  1. Preheat oven to 350°F.
  2. Combine ground chuck with remaining ingredients and mix well. Distribute evenly between three 9 x 5 loaf pans.
  3. Bake for 1 hour or until internal temperature reaches 160° F.
  4. Let rest 5 minutes, slice and serve.
