Soft Corn Tacos with Brisket and Blueberry Slaw

Serves 4

Make taco night extra delicious with this easy Soft Corn Tacos with Brisket and Blueberry Slaw recipe. The combination of brisket, cheese, jicama, berries, and serrano pepper is a real winner.

Ingredients:

  • 1 1/2 cups chopped leftover Certified Angus Beef ® brisket
  • 1 cup fresh blueberries
  • 1 1/2 cups shredded jicama
  • 1/2 serrano pepper, roasted, peeled and minced
  • 1 1/4 teaspoons chopped fresh cilantro
  • 1/3 teaspoon salt
  • 4 corn tortillas, warmed
  • 3/4 cup shredded Manchego or Monterey Jack cheese

Instructions:

  1. Combine blueberries, jicama, roasted pepper, cilantro and salt to make blueberry slaw.
  2. Place blueberry slaw on tortillas. Top with brisket and cheese. Roll and serve.
