Beef Vegetable Soup

Makes 8 servings

Made traditionally on the stovetop, Beef Vegetable Soup with celery and carrots is a delicious hearty meal on a cold day. An easy recipe sure to be a family favorite.

Ingredients:

  • 3 pounds Certified Angus Beef ® chuck, 1/4-inch dice
  • 6 cups beef stock
  • 3 cups peas
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 2 cups chopped onion
  • 1 bay leaf
  • 3 tablespoons vegetable oil
  • 1/4 teaspoon fennel seed
  • 1 teaspoon white pepper
  • 2 teaspoons kosher salt

Instructions:

  1. Season ground beef with salt, pepper and fennel.
  2. Heat oil in medium stockpot and brown beef. Add celery, carrots and onion; cook for 8 to 10 minutes. Add stock and bay leaf; simmer 1 hour.
  3. Add peas and cook an additional 30 minutes.
