Beef & Mushroom Ravioli
Makes 4 servings (6 ravioli per serving)

Pot roast and gravy transformed into delicious homemade Beef & Mushroom Ravioli. An easy recipe to make for a family-pleasing meal.
Ingredients:
1 pound
Certified Angus Beef
®
pre-cooked pot roast in gravy
2 tablespoons butter
1 tablespoon minced shallots
1 teaspoon minced garlic
1/2 cup chopped cremini mushrooms
1/2 cup shiitaki mushrooms
1 tablespoon minced fresh rosemary
1 teaspoon chopped fresh sage
1 package wonton wrappers
2 quarts water
Instructions:
In medium skillet, melt butter. Add shallots and garlic, and sauté over medium heat 1-2 minutes. Add mushrooms and cook until water releases; turn down heat and cook back to dry, being careful not to burn.
Remove pot roast from package. Reserve gravy and gently separate roast by hand into bite-sized pieces. Combine roast pieces with mushroom mixture, rosemary and sage. Place 1 teaspoon of mixture in each wonton wrapper. Moisten one edge of wrapper and fold over like an envelope. Seal by hand or use a ravioli tool.
Bring water to a boil. Gently place 6 ravioli in water, and cook about 3 minutes. Remove and repeat.
Warm reserved beef gravy in skillet over medium heat, add cooked ravioli, and serve.
