Fresh Herb Burger with Goat Cheese

Ingredients:
  • 1 1/2 pounds Certified Angus Beef ® ground chuck
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon zest, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 cup minced fresh chives
  • 2 tablespoons minced fresh parsley
  • 2 teaspoons minced fresh thyme
  • 1 1/2 teaspoons coarse kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1 1/2 to 2 cups (packed) baby arugula
  • 4 ounces fresh goat cheese (chevre), crumbled
  • Tomato slices (optional)
  • 4 hamburger buns
Instructions:
  1. Combine mayonnaise, lemon zest and lemon juice in a small mixing bowl; refrigerate.
  2. Preheat grill set to medium-high heat.
  3. In a medium bowl combine ground beef, chives, parsley and thyme. Lightly mix, avoiding overworking the beef. Form into four (6 ounce) patties, season with salt and pepper.
  4. Toast buns on grill until golden brown, 1 to 2 minutes; set aside.
  5. Place burgers in grill and sear 4 to 5 minutes on first side. Flip burgers, top with goat cheese, close lid to the grill. Cook for an additional 4 minutes or until the burgers reach an internal temperature of 160°F.
  6. Construct burgers: spread about 1-tablespoon of lemon mayonnaise on the bottom bun, top with 1/2-cup arugula, burger patty, tomato slice and top with bun.
