Delight your guests with this easy Thai Spring Rolls recipe. The combination of marinated and grilled flat iron steak with bok choy, radishes, cucumber, and almonds is simply divine!

Ingredients:
  • 1 pound Certified Angus Beef ® flat iron steak
  • 1/4 cup Asian fish sauce
  • 2 tablespoons sugar
  • 3 limes, juice two and cut one into small wedges
  • 2 2 jalapeños, seeded and minced
  • 2 teaspoons red pepper flakes
  • 1/2 cup minced cilantro
  • Olive oil, as needed
  • 1/2 cup red onion, thinly sliced
  • 1 cup bok choy, thinly sliced
  • 6 radishes, thinly sliced
  • 1 seedless cucumber, quartered and thinly sliced
  • 1/2 cup toasted almond slivers
  • 12 rice paper wraps, softened in water
  • Salt and pepper to taste
Instructions:
  1. Combine fish sauce, sugar, lime juice, jalapeños, red pepper flakes and cilantro in a small bowl to make a sauce.
  2. Brush flat iron steak with oil and season with salt and pepper. Grill to desired doneness and rest for 5 minutes. Cut steak thinly across the grain; toss in sauce. Drain excess sauce from steak slices before using in wrap.
  3. Combine onion, bok choy, radishes, cucumbers and almonds.
  4. Assemble wraps by placing 2 tablespoons vegetable mix in the center of the rice paper. Place 3 to 4 slices of steak on top; fold edges and roll. Lay wraps on a cookie sheet lined with wax paper. Cover with damp paper towel and allow to sit for 10 minutes. Serve with lime wedges.
