Ingredients:
  • 2 (12-ounce) Certified Angus Beef ® top sirloin steaks
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons Mirin or sweet white cooking wine
  • 2 tablespoons rice vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon fresh cracked black pepper
  • 2 teaspoons canola oil
Instructions:
  1. In a small mixing bowl whisk together soy sauce, water, mirin, rice vinegar and sugar until sugar is dissolved; set aside. Cut steaks in half to yield four 6-ounce steaks; season with salt and pepper.
  2. Preheat oven to 325°F. On the stovetop heat a large sauté pan (12-inch or larger) to medium high heat. Add canola oil, sear steaks two minutes on one side or until a nice crust develops, flip and sear second sides. Reduce heat to medium.
  3. Pour sauce into pan with steaks, bring to a simmer. Flip to coat steaks. Place pan in preheated oven 5 to 10 minutes or until steaks reach 125°F internal temperature for medium rare. Remove steaks from pan and allow to rest 5 minutes before serving.
  4. While steaks rest, bring sauce to a rapid simmer to thicken and reduce by half.
  5. Serve steaks with sauce drizzled over them.
