  • 4 Certified Angus Beef ® eye of round steaks, 3/4-inch thick
  • 1/2 cup pineapple juice
  • 3 tablespoons brown sugar
  • 1 tablespoon molasses
  • 1 tablespoon soy sauce
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon scotch bonnet powder or cayenne pepper
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  1. In a medium mixing bowl, combine pineapple juice, brown sugar, molasses, soy, salt, chili flakes, thyme, scotch bonnet powder, allspice and nutmeg. Whisk until salt and sugar have dissolved.
  2. Place eye of round steaks and marinade into a zipper-locking plastic bag, removing excess air. Refrigerate overnight.
  3. Discard marinade, pat steaks with paper towel. Grill over medium-high heat for 3-4 minutes per side (or until they reach an internal temperature of 125-130°F for medium rare).
