  • 3 large portabello mushrooms, sliced in 1-inch pieces
  • 1 red onion, diced
  • 6 (6-inch) sugar cane skewers, sharpened on one side (or substitute bamboo skewers, soaked in water)
  • 3 cups low sodium vegetable juice
  • 3/4 cup apple cider vinegar
  • 1/2 cup chopped onion
  • 1/4 cup bell pepper
  • 1/2 cup agave nectar
  • 1/3 cup low sodium Worcestershire sauce
  • 1/4 teaspoon hot sauce
  • 2 tablespoons garlic powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon mustard powder
  • Spice Mix
  • 1 1/2 teaspoons coconut sugar (or substitute granulated sugar)
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon ancho chili powder
  • 1/4 teaspoon dried Italian herbs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  1. In small saucepan over medium heat, combine vegetable juice, apple cider vinegar, onion, bell pepper, agave nectar, Worcestershire sauce, hot sauce, garlic powder, smoked paprika and mustard powder. Bring to a simmer and cook 15 minutes, until thickened.
  2. Remove sauce from heat and puree with an immersion blender or in a traditional blender. Allow sauce to cool slightly.
  3. Combine coconut sugar, salt, smoked paprika, garlic powder, onion powder, dry mustard, ancho chili powder, dried Italian herbs, black pepper and crushed red pepper, mixing well. Toss sirloin steak cubes with spice mixture and let rest 5 minutes.
  4. Layer steak, mushroom pieces and onions onto sharpened points of skewers. Divide ingredients among six skewers, planning one per person.
  5. Grill kabobs 3-4 minutes per side, about 10-15 minutes total, until meat is cooked to desired doneness. Brush cooked kabobs generously with barbecue sauce and serve.
