Ingredients:
  • 3 pounds Certified Angus Beef ® New York strip roast
  • 1 tablespoon coarse kosher salt
  • 2 teaspoons fresh cracked pepper
  • 1 lemon, juiced (about 1/4cup)
  • 1 teaspoon baking soda
  • 1/2 cup whole milk
  • 2 cups shredded cheddar cheese
  • 2 dozen small dinner rolls or slider buns
  • 2 tablespoons butter, melted
  • 2 tablespoons everything bagel seasoning
Instructions:
  1. ROAST. Preheat oven to 450°F. Season roast with salt and pepper, place on a roasting pan or sheet pan fitted with a wire rack and roast 15 minutes. Reduce heat to 325°F and continue to roast another 55 to 60 minutes. Once roast measures 120°F internally, remove from oven and allow to rest at least 20 minutes before slicing.
  2. MAKE CHEESE SAUCE. In a large saucepan combine lemon juice and baking soda. Allow mixture to foam up and sizzle off of the heat. Once all of the bubbles have subsided, add milk and put over medium heat to warm. Add shredded cheese to mixture, continuously stir until melted, remove from heat. If sauce is too thick, add more warm milk to thin out mixture.
  3. BAKE ROLLS. Preheat oven to 350°F. Place the rolls or buns on a large sheet pan, brush with melted butter and sprinkle with everything bagel seasoning. Bake until lightly browned and toasted, 5 to 10 minutes.
  4. ASSEMBLE. Slice roast against the grain as thinly as possible. Construct sandwiches with thinly sliced roast beef on the bottom bun, cheese sauce on top of beef and top with seasoned bun crowns.
