Shredded short ribs, cheese, and homemade three pepper salsa wrapped in a corn tortilla. Make this easy wrap recipe for any festive occasion.

Ingredients:
2 1/2 cups pre-cooked shredded
Certified Angus Beef
®
boneless shortribs
3/4 cup diced red pepper
1/2 cup diced poblano pepper
1/2 cup diced Anaheim pepper
1/2 cup canned corn, drained
1/2 cup diced sweet onion
2 tablespoons chopped fresh cilantro
1 cup seeded and diced tomatoes
1/2 tablespoon sugar
1 teaspoon kosher salt
1 teaspoon ground pepper
12 (6-inch) corn tortillas
6 ounces queso fresco or feta cheese
Instructions:
Combine peppers, corn, onion, cilantro, tomatoes, sugar, salt and pepper to make a salsa.
Wrap tortillas heavy-duty foil and heat.
Heat shredded short ribs.
Assemble by placing 3 tablespoons shredded short ribs on each tortilla with 2 tablespoons salsa and 1/2-ounce cheese. Wrap and serve, 2 per person
