  • 2 1/2 cups pre-cooked shredded Certified Angus Beef ® boneless shortribs
  • 3/4 cup diced red pepper
  • 1/2 cup diced poblano pepper
  • 1/2 cup diced Anaheim pepper
  • 1/2 cup canned corn, drained
  • 1/2 cup diced sweet onion
  • 2 tablespoons chopped fresh cilantro
  • 1 cup seeded and diced tomatoes
  • 1/2 tablespoon sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon ground pepper
  • 12 (6-inch) corn tortillas
  • 6 ounces queso fresco or feta cheese
  1. Combine peppers, corn, onion, cilantro, tomatoes, sugar, salt and pepper to make a salsa.
  2. Wrap tortillas heavy-duty foil and heat.
  3. Heat shredded short ribs.
  4. Assemble by placing 3 tablespoons shredded short ribs on each tortilla with 2 tablespoons salsa and 1/2-ounce cheese. Wrap and serve, 2 per person
