Shio Koji Marinated Steak Bites

Shio koji packs a ton of flavor, and the daikon, ginger and watercress add fresh bite to round out this dish. Shio koji is a traditional ingredient in Japanese cuisine. If your grocery store doesn’t carry it, you should be able to find it online.

Ingredients:
  • 1 pound Certified Angus Beef ® top sirloin steak, cut into 2-inch cubes
  • 1/4 cup shio koji
  • 1 tablespoon canola oil
  • 1/2 daikon radish, shredded
  • 2-inch segment ginger, peeled and julienned
  • 2 cups watercress, cleaned
Instructions:
  1. In a gallon zip top bag, combine cubed beef and shio koji. Mix well so that all the beef is well coated, refrigerate 1 hour.
  2. Pat beef dry with paper towels. Preheat a large skillet (with a tight-fitting lid) to medium heat and add canola oil. Add beef to the pan, cover with lid. Sear on first side about 2 minutes or until well browned. (Keep an eye on cubes because the marinade will burn if left on one side for too long.)
  3. Continue to flip cubes every 2 minutes in order to sear at least 3 sides, covering between each flip. Remove beef cubes from pan when they hit 130°F internal temperature measured with an instant-read thermometer.
  4. Mix together daikon and ginger. On a large plate, arrange watercress around the outside rim in a circle, top with daikon and ginger mix. Place beef in center of plate.
