  • 1 pound Certified Angus Beef ® flank steak
  • 2 tablespoons sesame oil, divided
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 1 jalapeño, seeded and chopped
  • 1/4 bok choy, chopped
  • 4 ounces shiitake mushrooms, sliced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon Sriracha or pepper sauce
  • 1/2 teaspoon crushed red pepper
  • 2 eggs, beaten
  • 1/4 package (1-ounce) cellophane noodles, blanched
  • 2 scallions, sliced
  • 1 teaspoon sesame seeds (optional)
  1. Rub one tablespoon sesame oil into flank steak. Heat large sauté pan over medium high heat. Sear steak 3 minutes per side to desired doneness (130° F internal temperature for medium rare); remove from pan.
  2. Add shallot, garlic, ginger, jalapeño, bok choy and mushrooms; sauté 3-5 minutes until bok choy is translucent.
  3. Stir in soy sauce, honey, Sriracha, crushed red pepper and eggs. Cook 3 minutes over low heat, stirring occasionally until eggs are cooked through Stir in noodles and remaining tablespoon of sesame oil.
  4. Slice steak across the grain into thin slices. Serve with noodle and vegetable mixture, garnished with scallions and sesame seeds.
