Taking a nod from Poke salad, this sesame-heavy diced beef and noodle dish combines fresh flavors over chilled buckwheat noodles. Enjoy a meal with bright, satisfying flavors!

Ingredients:
  • 1 pound Certified Angus Beef ® sirloin tip steak, 1/2 to 3/4-inch thick
  • 2 teaspoons kosher or sea salt, divided
  • 1 cup shelled edamame (soybeans)
  • 7 ounces (200 grams) soba noodles
  • 1/2 teaspoon pepper
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon minced fresh ginger
  • 2 cups shredded carrots
  • 1 cucumber, large dice
  • 1 avocado, sliced
Instructions:
  1. In a large sauce pan, bring 3 quarts of water and 1-teaspoon salt to a boil. Blanch edamame 3-4 minutes; pull from water with a strainer or slotted spoon, rinse under cold water; set aside. Boil soba noodles according to package directions (4-5 minutes), drain and rinse with cold water; set aside.
  2. Season sirloin tip steak with remaining 1-teaspoon salt and 1/2-teaspoon pepper. Sear over medium-high heat, 3 minutes per side or until internal temperature reaches 125°F for medium rare. Allow steaks to rest while constructing protein bowl.
  3. In a small mixing bowl, whisk together rice vinegar, sesame oil, soy sauce, honey and ginger.
  4. Dice cooked beef into 1/2-inch cubes, toss with noodles, carrots and sauce.
  5. Build protein bowls by dividing beef and noodle mixture among 6 bowls and top with edamame, cucumber and avocado.
