Sautéed Beef and Potatoes in Soy Sauce

This is a quick and hearty dish with a great beef and soy sauce flavor. Rice vinegar gives it a pop of acidity and a little butter at the end makes for a rich and silky sauce.

Ingredients:
  • 1 pound Certified Angus Beef ® top sirloin steak, cut into thin strips
  • 1/2 teaspoon kosher salt
  • 1 large potato, cut into 1-inch cubes
  • 1 bell pepper, cut into 1-inch cubes
  • 1 tablespoon canola oil
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon butter
Instructions:
  1. Season beef evenly with salt and refrigerate.
  2. Bring 1 quart of water to a boil, add potato and boil until mostly tender, 8 to 10 minutes; drain and set aside.
  3. Heat wok or large skillet to high heat and add canola oil. Add beef and bell pepper, begin to stir fry until both begin to brown (about 3 minutes). Stir in boiled potato, fry another 2 minutes.
  4. Reduce heat to medium; stir in soy sauce and rice vinegar. Simmer 2 minutes, stir in butter, constantly swirling in pan to emulsify sauce as butter melts. Serve immediately.
