Reverse Sear Steak from Frozen

Don’t thaw your steak before cooking! Here’s a technique for cooking a steak straight from the freezer. Special equipment: sheet pan with wire rack, an internal read thermometer, and either a cast iron skillet or hot grill.

Ingredients:
  • 4 (12-ounce) Certified Angus Beef ® individually frozen NY strip or ribeye steaks (1 1/4 to 1 1/2 inches thick)
  • 4 teaspoons coarse kosher salt
  • 2 teaspoons fresh cracked black pepper
  • 2 tablespoons canola oil
Instructions:
  1. Preheat oven to 275 °F. Place all steaks on sheet pan affixed with wire rack leaving at least 2 inches between each steak.
  2. Bake steaks about 60 minutes or until they reach an internal temperature of 115-120°F (for medium rare).
  3. Preheat cast iron pan or grill to medium high. Pat steaks dry on all sides with a clean paper towel and season evenly with salt and pepper. Add oil to pan and sear steaks 1 minute per side. Sear edges of steaks 30 seconds per side.
  4. Allow to rest 3 to 5 minutes before serving.
