Reverse Sear Spiced Sirloin Roast

  • 1 1/2 pounds Certified Angus Beef ® center-cut top sirloin roast
  • 2 teaspoons kosher or sea salt
  • 1 teaspoon cracked black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  1. Preheat oven to 250°F. Season sirloin roast evenly with salt and pepper.
  2. Place roast in roasting pan fitted with a rack, roast 1 hour 45 minutes or until internal temperature reaches 110°F.
  3. While roasting, prepare spice paste. In a small mixing bowl, combine olive oil, thyme, cinnamon and cumin.
  4. Remove sirloin roast from oven, increase oven temperature to 500°F.
  5. Coat roast evenly with spice paste, return sirloin to oven for an additional 15 minutes or until roast reaches an internal temperature of 120°F (for medium rare).
  6. Let roast rest 25 minutes before slicing.
