Pretzel Crusted Schnitzel

Ingredients:
  • 4 (6-ounce)Certified Angus Beef ® top round steaks, cut 1/4-inch thick
  • 1 1/2 teaspoons kosher salt, divided
  • 1 teaspoon black pepper, divided
  • 3/4 cup flour
  • 1 teaspoon mustard powder
  • 1 egg
  • 1 tablespoon water
  • 1/4 cup Dijon mustard
  • 2 cups finely crushed pretzels
  • 1 cup canola oil for pan frying
Instructions:
  1. Season top round steaks with 1-teaspoon salt and 1/2-teaspoon pepper
  2. Prepare 3 shallow bowls for dredging: 1) combine flour, mustard powder and remaining 1/2-teaspoon salt and 1/2-teaspoon pepper, 2) whisk together egg, water and Dijon mustard, 3) crushed pretzels.
  3. Submerge steaks in seasoned flour, dust off excess. Next dip in egg mixture, then crushed pretzels (making sure to push down into mixture to adhere to pretzels).
  4. Heat oil in a skillet on medium-high heat. Sauté steaks 3 minutes per side.
