A deeply flavored sauce made with roasted tomatoes, sherry, garlic, and coriander. Make this easy Piquant Tomato Sauce recipe for roast beef, steak, meatballs, and pasta.

Ingredients:
2 tablespoons olive oil
1/3 cup yellow onion, finely diced
6 garlic cloves, chopped
1/3 cup sherry
2 teaspoons coriander seeds, toasted
3/4 cup chicken stock
10 large Roma tomatoes, quartered and seeded
1 teaspoon black peppercorns, cracked
1 cinnamon stick
Salt and pepper to taste
Instructions:
Preheat oven to 375°F. Place 1 tablespoon oil in saucepan over medium heat. Add onion and garlic, and sweat gently for 2 minutes. Deglaze with sherry. Add toasted coriander seeds and chicken stock. Bring to a boil, turn off heat and cover.
Place tomatoes on sheet pan; rub with remaining oil and season with pepper. Roast for 10-15 minutes, or until tomato skins blister.
Add tomatoes to stock mixture. Add cinnamon stick and bring to boil. Reduce heat and simmer gently for 5 minutes.
Remove cinnamon stick. Purée sauce with hand blender or food processor. Use additional chicken stock to adjust consistency, if needed. Serve warm with prepared
