Pepper Steak

This recipe is influenced by Chinese cuisine. Versions of this dish can be found across North and South America alike. The beef cooks quickly and a sauce is built directly in the pan. An easy way to cook a quick and tasty meal.

Ingredients:
  • 2 pounds Certified Angus Beef ® sirloin flap or flank steak, cut in 2 pieces
  • 2 teaspoons coarse kosher salt
  • 1 teaspoon cracked black pepper
  • 1 tablespoon canola or avocado oil
  • 1 white onion, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 beef bouillon cube
  • 2 tablespoons corn starch
  • 3 tablespoons soy sauce
  • 2 teaspoons Worcestershire sauce
  • 1 cup cherry tomatoes, halved
Instructions:
  1. Season steak with salt and pepper. Preheat a cast iron skillet to medium high and add oil.
  2. Sear steaks on each side for 3 to 4 minutes or until well browned. Remove from pan and add onion and bell pepper to pan; sauté 3 minutes. While onion and peppers are searing, cut steak into cubes and return to pan.
  3. Add garlic and continue to cook 2 minutes, then add bouillon cube. Mix corn starch with 1-cup water, add to pan and bring to a simmer. Stir until sauce thickens and bouillon cube dissolves.
  4. Stir in soy sauce, Worcestershire sauce and cherry tomatoes, simmer 2 minutes and serve.
