Montreal Style New York Strip Roast

Serves 8
Cuisine: American
Category: Roasts, Marinades, Rubs & Sauces
The combination of Montreal steak seasoning and beef is nothing short of classic. Here we use some Dijon mustard to both adhere the seasoning and lend a little tang to the crust of the roast. Look for dill seed in small jars or in the bulk spice section of your grocery store.

Ingredients:
  • 4 pounds Certified Angus Beef ® strip roast
  • 2 tablespoons coarse kosher salt
  • 1 tablespoon fresh cracked pepper
  • 1 tablespoon dried minced garlic
  • 1 tablespoon dried minced onion
  • 1 tablespoon whole coriander seed
  • 1 teaspoon dill seed (optional)
  • 2 teaspoons red pepper flakes
  • 2 tablespoons Dijon mustard
Instructions:
  1. RUB. (Ideally done a day ahead of time.) In a small mixing bowl combine salt, pepper, garlic and onion. In a zip-top bag combine coriander seed, dill seed (if using) and red pepper. Place bag on a cutting board and tap with a mallet or a heavy bottomed pan to crack the seeds and break up the chili flakes. Add contents of bag to mixing bowl and combine. Coat roast with Dijon mustard then evenly season with spice blend; refrigerate.
  2. ROAST. Preheat oven to 450°F. Place roast on a roasting pan or sheet pan fitted with a wire rack, bake 15 minutes. Reduce heat to 325°F, continue to cook another 60 to 65 minutes until roast reaches an internal temperature of 120°F. Allow to rest at least 15 minutes before slicing thinly to serve.
