Ingredients:
  • 1 pound Certified Angus Beef ® ground beef
  • 1 cup farro
  • 3 teaspoons kosher or sea salt, divided
  • 1/2 teaspoon cumin
  • 1 teaspoon garlic, minced
  • 3 tablespoons fresh chopped parsley, divided
  • 2 teaspoons fresh chopped dill, divided
  • 1 lemon, halved and juiced
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 can chick peas, drained and rinsed
  • 1 zucchini, split in half lengthwise
  • 4 cups baby spinach, chopped
  • 1 tomato, diced
  • 1/2 cup crumbled feta cheese
Instructions:
  1. 1. Bring 2 quarts of water to a boil; stir in farro and 1-teaspoon salt. Reduce heat to low and simmer 30 minutes. Drain and reserve. (Note: prepare beef while farro cooks.)
  2. In a large mixing bowl combine ground beef, 1-teaspoon salt, 1-teaspoon pepper, cumin, minced garlic, 1-tablespoon chopped parsley and 1-teaspoon chopped dill. Form into eight small patties and refrigerate.
  3. Make yogurt sauce in a small bowl by whisking yogurt with 1-tablespoon parsley, remaining 1-teaspoon dill, half of lemon juice; set aside.
  4. Combine remaining lemon juice with remaining 1-teaspoon salt, remaining 1/2 teaspoon pepper, remaining 1-tablespoon parsley and olive oil. Brush on flesh side of zucchini halves and stir remaining marinade into farro. Stir chickpeas with farro.
  5. Grill beef patties over medium-high heat for about 3 minutes per side (or until they reach an internal temperature of 160°F). Grill zucchini 4 minutes per side. Allow patties to rest 5 minutes while slicing zucchini into 1/2-inch thick pieces.
  6. Build bowls with farro and chick pea blend, grilled beef patties, zucchini, spinach, tomato, feta cheese and yogurt sauce.
