Made-From-Scratch Corned Beef Brisket

Ingredients:
  • 4 pounds Certified Angus Beef ® brisket flat
  • 3 quarts water, divided
  • 3/4 cup packed brown sugar
  • 2/3 cup kosher salt
  • 1 tablespoon curing salt, Instcure #1 (also known as Prague powder or saltpeter)
  • 2 teaspoons whole coriander seeds
  • 2 teaspoons yellow mustard seeds
  • 2 teaspoons black peppercorns
  • 1 teaspoon red chili flakes
  • 1 cinnamon stick, crushed in pieces
  • 8 whole allspice berries
  • 6 bay leaves
  • 1 onion, cut in wedges
  • 1 carrot, peeled and chopped
  • 1 celery stalk, chopped
  • 3 garlic cloves, lightly smashed
  • 1 quart beef stock
Instructions:
  1. In a large stockpot combine 1 1/2 quarts1.5 l water, brown sugar, kosher salt, Instacure, coriander, mustard seeds, peppercorns, chili flakes, cinnamon, allspice and 3 hand-crushed bay leaves. (Reserve 3 whole bay leaves for later.) Bring to a boil to dissolve salt and sugar. Remove from heat. Add remaining 1 1/2 quarts1.5 l of water in the form of ice and water to chill brine quickly. Cool to below 40°F4°C.
  2. Lay brisket in a large container and cover with brine. Cover tightly and refrigerate for 6 days, turning every two days.
  3. Rinse brined brisket, discard brine.
  4. Place onion, carrot, celery, garlic cloves and remaining whole bay leaves into slow cooker. Top with brisket (cut to fit if you have to) and beef stock. Simmer on low 6 to 7 hours until tender.
  5. Slice thinly against the grain to serve.
