  • 1 pound Certified Angus Beef ® roast beef
  • 8 ounces cream cheese, softened
  • 1/2 cup roasted red peppers, finely diced
  • 1 teaspoon dried oregano
  • 1/2 small red onion, thinly sliced
  • 2 cups baby arugula
  • 4 teaspoons extra virgin olive oil
  • 4 teaspoons red wine vinegar
  • 4 large ciabatta rolls or 8 slices ciabatta bread
  1. PREP. In a small mixing bowl combine cream cheese, diced roasted red peppers and oregano with a rubber spatula. If using unsliced ciabatta bread, cut four equal sandwich size sections, then cut each in half horizontally.
  2. PREPARE SANDWICH. Spread 1/4 cup of cream cheese mixture on each ciabatta bottom. Layer with 1/4 of roast beef, sliced red onion and arugula. Top with 1 teaspoon each olive oil and red wine vinegar; place top bun and enjoy!
