  • 1 (19-ounce) package Certified Angus Beef ® precooked meatloaf, or leftover meatloaf
  • 1 (14-ounce) can artichoke heats, drained and chopped
  • 1/2 cup pitted and chopped kalamata olives
  • 2 Roma tomatoes, seeded and diced
  • 6 ounces crumbled feta cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 tablespoon minced garlic
  • Kosher salt and pepper to taste
  1. Preheat grill to medium high or turn on broiler.
  2. In a medium size bowl, mix together artichoke hearts, olives, tomatoes, feta, Parmesan and garlic; season with salt and pepper. Set aside.
  3. Slice meatloaf into 8 equal portions. Grill or broil each slice for 4 to 5 minutes on each side, turning once.
  4. Just before meatloaf is removed from grill or broiler, top with artichoke mixture, close the lid and melt slightly.
