Ingredients:
  • 2 1/2 pounds Certified Angus Beef ® ground chuck
  • 1 1/2 cups oatmeal
  • 2 onions, finely minced
  • 1 stalk celery, finely minced
  • 1 carrot, grated
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 1 cup brown sugar
  • 1 1/2 cups ketchup
Instructions:
  1. Preheat oven to 300° F.
  2. Mix ground chuck, oatmeal, onion, celery, carrot, eggs, milk, salt and pepper together in a bowl. Roll into 1 1/2–2 inch meatballs and place in a 9 x 13 inch dish sprayed with cooking spray.
  3. Mix together brown sugar and ketchup; spoon over meatballs. Cover baking dish with foil, and bake for 1 hour.
  4. Serve as an appetizer, over pasta or on a hogie bun.
