Ingredients:

ground beef
2 fresh sage leaves, chopped (1-teaspoon)
4 sprigs fresh thyme, leaves stripped from stem and finely chopped (1-teaspoon)
1 sprig fresh rosemary, needles stripped from stem and finely chopped (1-teaspoon)
2 1/2 teaspoons kosher salt, divided
1 teaspoon coarse black pepper, divided
1/2 teaspoon red chili flakes
1/2 teaspoon granulated garlic
1/2 teaspoon granulated onion
1/4 teaspoon ground nutmeg
1/4 cup canola oil
3 cups frozen diced potatoes
1 small yellow onion, diced
1 red bell pepper, diced
6 fried eggs
Instructions:
In a large mixing bowl combine ground beef, sage, thyme, rosemary, 1-teaspoon salt, 1/2-teaspoon pepper, chili flakes, garlic, onion and nutmeg; mix evenly.
Heat a large skillet over medium-high heat and brown seasoned beef, breaking up into pieces as it cooks. Remove from pan to a clean plate and set aside.
Add 2-tablespoons of oil to pan; add diced potatoes, remaining 1 1/2-teaspoons salt and 1/2-teaspoon pepper. Brown potatoes until they become golden and crisp. (Tip: this is a good time to fry your eggs in a separate skillet)
Stir in onion and red pepper, sauté 5-6 minutes, stir in reserved beef and turn off heat.
Top with fried eggs and serve.
