Ingredients:
  • 1 1/2 pounds Certified Angus Beef ® flank steak
  • 1/2 pound bacon, cooked and crumbled
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup soft bread crumbs
  • 6 ounces marinated artichoke hearts, drained and chopped
  • 1 cup fresh chopped spinach
  • 1 cup finely chopped white onion
  • 1/2 cup chopped mushrooms
  • 3 tablespoons olive oil
  • 15 ounces beef broth
Instructions:
  1. Preheat oven to 350°F.
  2. Pound flank steak until very thin. For best results, ask your butcher to run the flank steak through the tenderizer twice.
  3. Mix together the bacon, cheese, bread crumbs, artichokes, spinach, and 1/2-cup onion and 1/4-cup mushrooms.
  4. Spread the spinach mixture on flank steak, leaving about one inch from the edge. Starting with the short side, roll jelly-roll fashion and tie with kitchen string about every 3 inches.
  5. In a large skillet, heat olive oil until hot. Add the flank steak and sear on all sides. Place seared flank steak in a baking dish.
  6. Mix remaining onion, mushrooms and broth and pour over flank steak.
  7. Cover with foil and bake for 45 to 60 minutes. Let stand 5 minutes before slicing.
