Strip Steaks and Arepas

Arepas are a type of pancake made from a special corn flour and are one of the most popular dishes in Latin American cuisine, especially in Venezuela and Colombia. Mixing in mozzarella cheese is especially delicious. The flavor of the marinated steak with the cheesy corn pancake is a perfect match.

Ingredients:
  • 2 (14-16 ounce) Certified Angus Beef ® New York strip steaks
  • 1/2 white onion, finely diced
  • 8 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 1 bottle (12 ounces) Mexican Lager
  • 2 tablespoons plus 2 teaspoons canola oil, divided
  • 1 tablespoon ground cumin
  • 2 1/2 teaspoons salt, divided
  • 1/2 teaspoon cracked black pepper
  • 1 cup precooked white cornmeal (arepa masa)
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon butter
  • 1/3 cup fresh cilantro leaves
Instructions:
  1. In a large heavy duty zip top bag combine onion, garlic, green onions, beer, 2-tablespoons canola oil, cumin, 2-teaspoons salt and pepper. Add steak to marinade making sure it is well submerged; refrigerate a minimum of 3 hours or overnight.
  2. Make arepa dough. In a large mixing bowl combine cornmeal and 1 1/4-cups warm water and stir vigorously with a spatula. Add 1/2-teaspoon salt, 2-teaspoons canola oil and cheese. Kneed in the bowl 2 minutes, cover with plastic wrap, rest at room temperature 10 minutes.
  3. Divide arepa dough evenly into four portions, form a ball with each. Wet hands with warm water, begin to form a patty from ball of dough. Continue to flatten until it is about 5 inches wide and 1/2 inch thick. Repeat with remaining dough, making sure to wet hands for each patty.
  4. Preheat oven to 350°F. Melt half the butter in a 12-inch non-stick skillet over medium-low heat. Add two arepas and cook 5 minutes on each side until golden brown. Place on a sheet pan lined with a wire rack and repeat with remaining butter and arepas. Bake arepas in oven 10 minutes, remove and allow to slightly cool on the wire rack.
  5. Remove steak from marinade, pat dry and grill over high heat (or pan sear) 5 minutes per side then grill over in-direct heat (or in 350°F oven) an additional 7 to 10 minutes or until steak reaches 125°F for medium rare. Allow to rest 5 to 10 minutes.
  6. Thinly slice steak and serve over arepas, garnished with fresh cilantro leaves.
