Ingredients:
  • 1 1/2 pounds Certified Angus Beef ® ground beef, 80% lean
  • 1 1/2 teaspoons coarse kosher salt, divided
  • 1 teaspoon dried minced garlic
  • 1 teaspoon dried minced onion
  • 1 teaspoon poppy seeds
  • 1 teaspoon sesame seeds
  • 3 egg yolks
  • 4 whole eggs
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon cayenne pepper
  • 2 sticks unsalted butter
  • 8 slices Canadian bacon
  • 4 English muffins
Instructions:
  1. Combine 1 teaspoon salt, dried garlic, dried onion, poppy seeds and sesame seeds to create an “everything bagel” seasoning blend. In a large mixing bowl hand blend with ground beef, form four patties and refrigerate.
  2. Make hollandaise sauce. In a blender, combine egg yolk, lemon juice, 1/2-teaspoon salt, and cayenne pepper. Pulse blender for 5 seconds to combine all ingredients.
  3. Heat butter in a saucepan over medium high heat until the melted butter reaches 185°F. With the blender on low speed, slowly drizzle the melted butter into the blender through the hole in the top of the lid. Hollandaise should be thick and pale yellow. Keep warm while cooking burgers.
  4. Pan-sear burgers for 4-5 minutes per side until internal temperature is 150°F. Allow to rest in a warm place while finishing the burger building.
  5. Toast English muffins; keep warm. Fry four eggs to desired doneness; keep warm.
  6. Sear Canadian bacon over medium high heat for 1 minute per side and place 2 pieces on the bottom half of each English muffin; top with burger patty, fried egg, a large drizzle of hollandaise sauce and English muffin top.
