Beef & Scallion Rolls (Negimaki)

Ingredients:
  • 1 pound Certified Angus Beef ® top round steak, thinly-sliced (1/8-inch thick, 4 x 5-inch pieces)
  • 1/2 cup soy sauce
  • 1/4 cup sugar
  • 3 tablespoons rice vinegar
  • 8 scallions, washed, roots removed and cut in half
  • 16 toothpicks
  • 1 tablespoon toasted sesame seeds (optional)
Instructions:
  1. Combine soy sauce, sugar and rice vinegar in a small saucepan and bring to a boil. Reduce heat to low and simmer 5 minutes until reduced to 1/2 cup; set aside.
  2. Slice white side of scallions in half lengthwise. Lay out a sheet of beef with short side close to you. Lay both a white and green scallion piece along near edge close to you, roll up tightly and secure with 2 toothpicks. Repeat with remaining slices of beef.
  3. Preheat grill to high and set aside half the sauce for finishing. Place beef and scallion rolls on the grill and sear for 2 minutes. Flip over, brush with glaze and sear another 2 minutes. Flip so that glazed side is searing and brush unglazed side with sauce; grill 2 more minutes. Flip one last time and grill 2 more minutes, or until internal temperature of beef reaches 135°F.
  4. Transfer rolls to a cutting board, carefully remove all toothpicks and slice rolls into 1-inch pieces. Serve on end, drizzling with reserved glaze and garnished with sesame seeds.
