In a large skillet, heat canola oil over medium-high heat. Add ground beef and season with salt and pepper. Brown about 3 minutes; drain any excess oil.
Stir in shallot, ginger, garlic, lemongrass and scallion whites, (save green for garnish). Sauté 3 more minutes, stir in soy sauce, sambal and lime juice; simmer 1 minute.
Serve beef larb family style garnished with cilantro, mint and scallion greens, lettuce on the side.
