Beef Katsu Cutlet Sandwich

Ingredients:
  • 1 1/2 pounds Certified Angus Beef ® flat iron steaks (cut into four 6-ounce pieces)
  • 1 1/2 teaspoons salt, divided
  • 1 teaspoon pepper, divided
  • 1/2 cup flour
  • 1 egg, beaten
  • 1/4 cup milk
  • 1 1/2 cups panko
  • 1/4 cup ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon garlic powder
  • 2 cups canola oil for frying
  • 8 slices Texas toast
Instructions:
  1. Using a meat mallet, gently pound out each piece of flat iron to match the size of bread slices, flattening to a thickness of about 1/2-inch. Season steaks with 1-teaspoon salt and 1/2-teaspoon pepper. Remove crust edges from bread (optional).
  2. Set up breading station using 3 bowls. In first bowl, combine flour and remaining salt and pepper. In second bowl, whisk together egg and milk, in third bowl, add panko.
  3. Bread steaks by dusting in flour, shake off excess, submerge in egg wash, then in panko. Make sure to press steaks into panko on both sides to ensure an even coating of breadcrumbs. Bread all pieces of flat iron, set on a wire rack while making sauce.
  4. In clean bowl, combine ketchup, soy sauce, Worcestershire, mustard powder and garlic powder; whisk to combine. Spoon a generous tablespoon of sauce on each of four slices of bread.
  5. Heat oil in a heavy-bottomed pan with high sides (like a Dutch oven or large cast iron skillet). When oil reaches 375°F, add breaded steaks, frying in two batches, 90 seconds per side or until steaks are golden brown and reach an internal temperature of 130°F for medium rare. Allow steaks to rest on a clean wire rack 5 minutes before serving.
  6. Place steaks on sauced slice of bread, top with second slice and serve immediately.
